But Cava doesn&#039;t have a great reputation (especially in the UK)--witness the rise of Prosecco in recent years as an easy-going bubbly. What with that and producers like Raventos defecting from the DO, he might want to rethink the strategy.]]></description>

If he&#039;s serious about the &quot;unique&quot; part, then the D.O. is going to have to insist on grubbing up all those nice Chardonnay and Pinot Noir vines and replacing them with parellada, macabeo and xarel-lo. Which might be a problem, since the high-end Cavas like Gramona have significant proportions of Chardonnay in the blend.]]></description>
